So my previous recipe for fudge (available here) went down pretty well but I know the whole process of making fudge is fraught with potential for calamity. Fear thee not, for I hath a magical recipe which requires no saucepan, no sugar thermometer and no muscles of steel. If you have a microwave, you can make fudge in 5 minutes. Intrigued...? - Bekki
Ingredients;
397g condensed milk (1 tin)
350g chocolate - milk or dark
50g butter
150g icing sugar
Equipment;
Microwave
Oiled tin to set fudge in
Method;
397g condensed milk (1 tin)
350g chocolate - milk or dark
50g butter
150g icing sugar
Equipment;
Microwave
Oiled tin to set fudge in
Method;
- Put the condensed milk, chocolate (broken up) and the butter into a microwave safe container (I used a 2ltr plastic jug) and heat on max power for 30 second bursts, stirring each time it pings.
- Once everything is melted and combined smoothly, sift in the icing sugar.
- Mix thoroughly to make sure there are no clumps of sugar. To make this easier, once you've loosely mixed the sugar in, pop in the microwave for another 20 seconds to soften the mix up again and give another beating.
- Transfer the fudge mixture into the oiled tin and smooth out
- Place in the fridge for around 2 hours and voila. It's set.
- Cut into squares and keep in airtight containers in the fridge (it's pretty sticky so best not to keep at room temperature but would be good taking a few pieces out before serving to come to room temp) for up to 14 days. If you can make it last that long...
Verdict;
To my mind this isn't true fudge, but it's a very good alternative. It's not got quite the same texture as traditional fudge but the flavour is good and it's so simple that you really can't complain!
