Warm Potato and Samphire Salad

I found myself in a strange position, with a carton of samphire in the fridge and no idea what to do with it. I've loved it whenever I have had it in restaurants, with its fresh, briny taste and snappy crunch, but when faced with cooking it myself, I didn't have a clue! Eventually, I came up with a simple warm, dressed salad that showcased all of the best elements of each ingredient - Pip

Porcini Risotto

After an outing to Carluccio's where I spent far too much time and money in the little shop attached to it, I came home with some lovely carnaroli rice, wafer thin dried poricini mushrooms and golden porcini oil. The ingredients were of such lovely quality that I didn't want to overcomplicate them, so I decided to go for a simple yet decadent risotto that really allows each component to shine - Pip

Parmesan Gougeres

So, I was looking for something to make as a birthday treat for someone who is not a fan of sweets - I know, what the Hell, right? It had to be savoury, but still feel decadant. What better than little choux pastry buns? They're simple, buttery and light, and are a great accompaniment to a birthday cocktail. Best of all, a small amount yeilds a pretty large batch, with these measurements making about thirty little bitesized buns. Winner! - Pip
