I am a BIG lover of all things cheesecakey, so decided to try my hand at a baked number. It was really easy and super tasty, I hope you enjoy it as much as I did! - Bekki
Ingredients;
200g Digestives
90g Butter
600g Cream Cheese (full-fat)
250g Golden Caster Sugar
150g Natural Yogurt
3 Eggs
2 Lemons
50g Plain Flour
150g Blueberries
Oven Temperature;
120c/235f/ Gas Mark 1/4 (cool)
Equipment;
Zester
Springform, Loose Bottom Tin - 20cm
Food Processor
Method;
- Blitz your digestives in the food processor until they are fine. If you don't have a processor, bash them with a rolling pin. Great for de-stressing!
- Melt the butter and pour into the biscuits and mix together.
- Tip the buttery biscuit crumbs into your tin and press down to form an even base.
Top Tip; Use a potato masher to press down the mix. It makes it super compacted and smooth.
- Pop the base into the fridge to firm up whilst you prepare the cheese mix.
- Preheat your oven to 120c.
- Beat in 1 egg at a time, mixing until completely incorporated before adding the next egg.
- Add the zest of 2 lemons and the juice of 1 at the same time as your sifted flour. Beat until smooth.
- Fold in your blueberries.
- Remove your base from the fridge and gently pour the cheese mix over the base. Don't pour too quickly as you may get crumbs from the base mixed in with the cheese.
- Bake in the oven for 40-50 minutes. After this time, turn off the oven but leave the cheesecake in there for about an hour.
- Remove from the warm oven and leave to cool to room temperature then put into the fridge.
- Serve with fresh blueberries and a fruit coulis.
Verdict;
Definitely one for the naughtier among you, since full-fat cream cheese is the only way to go! The freshness from the lemon mixed with the sweetness of the blueberries and the velvety creaminess of the cheesecake itself make for a really indulgent treat full of depth and interest.
You'd be a very welcome guest at any party if you bought this little treat along with you!
You could try using other berries if blueberries aren't your thing. Raspberries or cherries would work nicely and would stain the mix a slight pinky tinge. Really nice for a girls night!
