Ingredients;
100g Self Raising Flour
30g Caster Sugar
1 Egg (whisk it up)
75g Yogurt (We used greek yogurt with honey!)
50ml Milk
100g blueberries (crushed)
Butter or Oil to fry
Equipment;
Heavy Based Non-Stick Frying Pan
Method;
- Put the egg, yogurt and milk into a bowl and whisk together until smooth and combined.
- Add in the sugar and flour and beat into the wet ingredients until incorporated. Pop the mix to one side for 5 minutes.
- Heat your pan up and pop in a knob of butter to melt.
- Add your crushed blueberries to the pancake batter and stir through.
- Put a ladle full of mix into the hot pan and cook for 1-2 minutes on each side. They should be golden and well risen.
- Serve immediately with whatever your heart desires! We went for vanilla ice cream and blueberries!
The pancakes took a little playing around with to get to the above recipe. We tried using whole berries in the batter but they didn't carry well, so we crushed them and voila, perfect!
The yogurt pancake mix isn't hugely flavourful by itself but seems to be a really good carrier of flavour. The pancakes are also quite robust so would be great to experiment with bold toppings.
Overall, they were yum yum yum once we'd cracked it!
