Equipment;
Heavy Based Non-stick Frying Pan

Method;
- Sift together all of the dry ingredients into a bowl.
- Whisk together the milk, egg and melted butter and add them to the dry mixture.
- Whisk until you have a thick but smooth batter with no lumps.
- Set the batter to one side for 5 minutes or so. You can heat up your non-stick frying pan at this point so that it gets nice and hot.
- Once your batter has stood for a few minutes, pop a knob of butter into the hot pan. Once melted pop a ladle of batter into the pan. You should be able to fit in 2 pancakes at a time, so put in another ladle full the other side of the frying pan.
- When the pancake begins to bubble and is matte in appearance across the top, flip the pancake over. It should be golden brown and well risen!
- Once both sides are golden, remove from the heat and serve immediately with your chosen topping!

- Whilst the pancakes are cooking, either fry or grill your bacon until it is really crisp.
- Pop the bacon on to kitchen towel to absorb the excess oil.
- Layer up bacon and pancakes as high as you dare/as far as your stomach will allow.
- Drizzle with maple syrup and enjoy right away.
Verdict;
The sweet pancake is really light and fluffy which is ideal as a breakfast or dessert as it isn't too heavy. The sweetness of the pancake and the syrup is really tasty alongside the salty, crisp bacon. If you aren't a huge fan of sweet pancakes, I would highly recommend this as a great alternative to the normal lemon and sugar.
