Suitable only for the naughtiest nommers!
Sometimes you get a request for cake. And sometimes you let the suggester decide on the type of cake. When you do... this is what happens! - Bekki
Ingredients;
300g Chocolate digestives
170g Butter
50g Chocolate chips
300g Cream cheese
100g Mascarpone cheese
150g Icing sugar
300ml Double cream
240g Cadburys Daim bar (2x 120g bars)
Daim bars to decorate
Equipment;
Processor & electric whisk.
7/8" loose bottomed cake tin
Method;
- Take the digestives and blitz them to a fine crumb in the processor. No biggy if you don't have a processor, just bash them to bits in a bag with a rolling pin. Call it stress relief!
- Melt the butter and add to the biscuit crumbs
- Once all mixed together, add the chocolate chips (optional, but if you're gonna do it, you may as well do it right)
- Press the buttery biscuits into the base of your cake tin until compacted and smooth. I use a potato masher to get mine flat but the back of a spoon is just as good.
- Pop that into the fridge for 10 minutes just to get a bit firm. It stops any crumbs coming up into the cheesecake,
- In the microwave, melt the 240g of chocolate daim - do in slow bursts so as not to overcook the chocolate. Leave to cool for a few minutes.
- Now take your cheeses and the icing sugar and whisk until stiff.
- Add the cream and whisk again until very very thick. It should hold its shape completely without any softness.
- Now add the melted chocolate and beat until thoroughly mixed.
- Remove the base from the fridge and spoon in the cheesecake mix. Level out with a palette knife or the back of a spoon until smooth and level.
- Pop the cheesecake in the fridge for at least 3-4 hours just to really firm up.
- Decorate with crushed daim bars or whatever you choose.
- Will keep in the fridge for 48hrs (if you have enough self control to leave it that long),
Verdict;
Deadly.
Amazing. But deadly!
The crunch from the Daim bars adds great texture to the otherwise velvety cheesecake. Very sweet, very naughty. But everybody deserves a treat now and then!
