Two Ingredient Breakfast Biscuits

Suitable for Vegans

So as I mentioned previously, I'm trying to be healthier and have a better diet. As a result, breakfast is now a big deal for me and I like something quick, easy but filling enough and with a slow release of energy to get me through the morning. Just two ingredients combined together achieves ALL of that plus some! - Bekki

Ingredients;
2 ripe (or overripe) bananas
2 cups of oats

Oven temperature;
180c/350f/Gas 4

Equipment;
Food processor or blender
Lined baking trays

Method;

I'm literally about to tell you to combine two ingredients. I feel like a cheat even calling it a method!
  • Put your oats into a food processor (if you have a blender, this should also do the trick) and turn on low/medium speed for a minute or so. You want the oats to resemble a course flour. Not completely smooth otherwise you're final product will have no texture.
  • In a bowl, mash your banana.
  • Tip the oats into the mashed bananas and mix with a spoon.
  • Place spoonfuls of the mix onto baking sheet and shape into rounds. You should get 10-12 biscuits out of this recipe.
  • Pop into the preheated oven for 10-12 minutes, checking to make sure they don't catch.
  • Cool on a wire rack, then they are ready to go.
Verdict;

Quick, simple and only 60 calories a pop on average. Not bad going for 15 minutes! Plain, they taste like banana bread in my opinion but you can add things in if you wan't a bit more interest or flavour. You could add dried fruit (think raisins, cranberries etc) chocolate chips, nuts, seeds or spices. If you're going for solid add ins, you need about half a cup. If you're going for powdered add ins, you need approx 1tbsp but taste before you bake - you can always add more but you can't take it out!
Will keep for 2 days in an airtight container but also freeze really well - just bring out a couple the night before and leave in the fridge to defrost.

PS, they taste epic smeared with Nutella!
