Triple Chocolate Brownies

Ever thought "I wish there was something I could make that included all three types of chocolate and was also good warm, cold or with ice cream"? Yeah me too. Here it is! Not for the faint-hearted or the sugarphobic! Enjoy - Bekki

Ingredients;
200g Dark chocolate (it doesn't HAVE to be fancy. Honestly.)
200g Butter at room temperature
100g Plain flour
50g Cocoa powder (this needs to be the best you can afford)
100g of Cadbury's Big Taste Triple Choc Sensation
(failing that, an equal quantity of dark, milk and white chocolate)
3 Eggs at room temperature
275g Caster sugar

Equipment;
Electric whisk
23cm lined brownie tin or similar

Oven Temp;
180c/350f/Gas 4

Method;
  • Break up the 200g dark chocolate and pop into a microwave safe container along with the butter.
  • Place into the microwave on high for 30 second burst until the chocolate and butter have melted and are smooth and silky.
  • Put to one side to cool to room temperature.
  • Whisk together the eggs and sugar until fluffy.
  • Sift in the flour and cocoa powder and fold in gently, trying to not knock too much air out.
  • Pour the mix into the melted chocolate and combine until well mixed.
  • Chop the chocolate into chunks (the size is up to you, but think choc chip size as a good guide).
  • Mix the chocolate chunks into the brownie batter to combine and distribute evenly.
  • Pour the brownie mix into the prepared tin and level out if necessary.
  • Place into the oven for 20 minutes and check to see how it's doing. You want the middle to be just set so that you have squidgy but not gloopy brownies (aren't my adjectives quite something to behold!). This can take up to 35 minutes depending on your oven but keep an eye on them every 5 minutes from the 20 minute mark.
  • Leave to cool completely in the tin before cutting the brownies into slices. Cutting them whilst they're still warm is very messy and tends to ruin them a little.
  • These store really well in air tight containers for about a week or two... If you somehow don't eat them before that time is up!

Verdict;

Much chocolate. Such brownie. So wow!
These are indulgent and definitely a treat. I had mine warmed up for 20 seconds in the microwave with a scoop of salted caramel ice cream and I honestly think I saw a divine being. These are so delightfully squidgy but hold their form well. The chocolate chunks add texture and the crust on top is insanely delicate and adds great flavour having been a little more baked than the rest.
